Spoiled Rotten

It's Friday! Can I get an amen??? When I got in my car this afternoon, the thermometer said 91! I'm not complaining, though. I LOVE hot weather!

Today was a good day at school. First of all, we are reading one of my favorite books ever...Charlotte's Web. I just love that story and I think it is perfect for spring. If you've never read that book, you seriously should. Even adults would love it. E. B. White is the BEST writer!

Second, when you are a teacher you get so spoiled on your birthday! Tomorrow is my birthday, so my class celebrated it today. I got these bright flowers and a balloon that sings when you tap it.





I also got a cookie cake that we shared with the class. Plus a little girl in my class has a dad who is a chef. He made my dinner for tonight...homemade meatloaf and cheesy potatoes. Are you kidding me??? How wonderful is that!? Dinner is made for tonight.


My class also gave me a day at the spa. I have never done that, believe it or not. So I am looking forward to a day of relaxation. Plus a little girl in my class gave me a $75 gift certificate to a very nice upscale restaurant that I have never tried before. I love trying new things, so that will be fun.

Tonight I am looking forward to maybe sitting on my porch and reading a magazine when it cools off and just being lazy this weekend. Yay for Friday nights!

Wow sounds like your birthday is off to a great start! How wonderful to have dinner prepared for you --and by a CHEF, no less!!!

Girl, you racked up! lol. We teach a TOTALLY different "class" of kids (for lack of a better word! Most of my kids don't know what they will eat for dinner, so gifts for teacher are off the radar! I actually have students that pick up a "snack backpack" before they leave for the weekend because the only food they get comes from the school cafeteria and they have to eat something over the weekend! Okay, that's depressing... on to something that is not!

HAPPY BIRTHDAY

And... the best potato salad you'll ever eat:

5lbs. red potatoes
4 celery ribs, sliced
1 bunch green onions, sliced
2 tablespoons of dill weed
2 teaspoons of salt
2 cups of mayonnaise
1 bottle of cucumber ranch salad dressing {16 ounce bottle}

Place potatoes in a large "kettle"{I guess that is what you call it?} - cover with water. Bring to boil. Reduce heat; cover and simmer for 20-25 minutes {or until tender.} Drain and cool {cooling will take some time - I always put them in the fridge!} Cut potatoes into small cubes.

In a large bowl, combine the potatoes, celery, onions, dill and salt. In a smaller bowl, whisk may and salad dressing until blended. Pour over potato mix and stir gently to coat. Cover; Refrigerate for at least 6 hours before serving! This recipe makes a bunch! And I have NO IDEA how much - it just always gets eaten!
